Ingredients

  • 1chicken thigh, cut into bite-size pieces
  • ¼onion, sliced
  • 1egg, beaten
  • steamed rice
  • 1green onion, finely chopped
  • salt to taste
  • ¼ cupdashi
  • 1 tbspmirin
  • 1 tbspsoy sauce
  • 1 tbspsake
  • 2 tspsugar

Instructions

    Mix dashi, mirin, soy sauce, sake, and sugar to make the sauce.

    Flash boil chicken for 10 seconds and remove.

    Simmer onion in sauce until soft.

  4. 4

    Add chicken and beaten egg. Cook over medium heat until egg is just set.

    Serve over rice and top with green onions.
