Ingredients

  • 1 lbwhole chicken
  • 1 quartwater
  • ¼onion
  • 2 tspsalt
  • ⅓ cupchicken broth
  • 1 tsprock sugar
  • ½green onion
  • 1 sliceginger
  • thumbginger (for aromatics)
  • 1shallot
  • 1 tspcoriander seeds
  • cinnamon stick
  • 1star anise

Instructions

    Wash chicken and rub the skin generously with salt.

    Combine all soup ingredients and bring to a boil slowly, continuously skimming off scum.

    Boil for 30 minutes.

    Remove chicken and let cool. Shred the meat.

    Add aromatics in a steeper and boil broth for another 30 minutes.

    Serve over rice noodles with shredded chicken.
