Pork Katsu

Ingredients

  • 1 lbpork shoulder, sliced ¼ inch thick
  • salt and pepper

Breading

  • 1 cupflour
  • 2eggs, beaten
  • 1½ cupspanko breadcrumbs
  • oil for deep frying

Instructions

    Season pork slices on both sides with salt and pepper.

    Set up a breading station: flour in one dish, beaten eggs in another, and panko in a third.

    Coat each pork slice in flour, then egg, then panko, pressing gently to adhere.

    Heat oil to 350°F. Deep fry pork in batches for about 3 minutes per side until golden brown and cooked through.
