Tomato and Egg

Ingredients

  • 1 lbtomatoes, cut into wedges
  • 1scallion
  • 4eggs, beaten
  • ¾ tspsalt
  • ¼ tspwhite pepper
  • ½ tspsesame oil
  • 1 tspshaoxing wine
  • 3 tbspvegetable oil
  • 2 tspsugar

Instructions

    Mix eggs with ¼ tsp salt, white pepper, sesame oil, and shaoxing wine.

    Heat wok over high heat until very hot. Add 2 tbsp oil, then immediately add the egg mixture.

    Scramble eggs and remove from wok.

    Add 1 tbsp oil to wok. Add tomatoes, sugar, and ½ tsp salt. Cook briefly.

    Return eggs to wok and mix together.

    Turn off heat and add scallions.
